What are some actually good meal prep ideas that dont taste terrible by day 4?

I've tried meal prepping before but by Thursday everything tastes like sad refrigerator. Chicken gets rubbery, rice gets hard, vegetables get soggy. Am I doing something wrong or is meal prep just overrated? I need lunches for work that are actually edible.

The secret is choosing the RIGHT foods to prep. Some things just don't hold up. Here's what actually works:

Foods that meal prep well:

  • Burrito bowls (keep components separate, assemble day-of)

  • Soups and chilis (actually taste BETTER after a few days)

  • Grain salads with hearty greens like kale

  • Pulled pork or shredded chicken (stays moist)

  • Baked pasta dishes

  • Curry (flavors develop over time)
  • Tips that made a huge difference:

  • Don't fully cook rice - make it slightly underdone

  • Keep sauces/dressings separate until eating

  • Use glass containers, not plastic

  • Let food cool completely before refrigerating

  • Reheat with a splash of water to add moisture back
  • My go-to rotation:

  • Monday: Chicken burrito bowl

  • Tuesday: Same

  • Wednesday: Soup/chili

  • Thursday: Same

  • Friday: Treat myself to something fresh


Preparing two different meals instead of five of the same thing also helps with the boredom factor.
