Let's face it, weeknights can be chaotic. Between work, family, and other responsibilities, it's easy to let cooking fall by the wayside. But a tasty, home-cooked meal is just what we need to recharge and refocus.
So, how can we make weeknight dinners less stressful? For me, it all comes down to planning ahead. I take a few minutes each Sunday to plan out my meals for the week, make a grocery list, and prep any ingredients I can.
Meal Prep Hacks
Here are a few of my favorite meal prep hacks to help you get started:
Make a batch of grains. Whether it's rice, quinoa, or farro, cooking a big batch of grains on the weekend can be a huge time-saver during the week. Simply reheat and add to your favorite dishes.
Roast a bunch of veggies. Roasting brings out the natural sweetness in veggies, and it's so easy to do in bulk. Simply toss your favorite veggies (like broccoli, carrots, and sweet potatoes) with some oil, salt, and pepper, and roast at 400°F for 20-25 minutes.
Hard-boil some eggs. Hard-boiled eggs are a great protein source and can be easily added to salads, sandwiches, or eaten on their own.
Make a big batch of soup. Soup is a great option for weeknight dinners because it's so easy to reheat and customize with your favorite toppings.
