Why does my homemade kombucha always seem to be too fizzy and unpleasant to drink?
I've been trying to brew my own kombucha at home for a few months now, but I've been consistently disappointed with the results. The SCOBY (Symbiotic Culture of Bacteria and Yeast) seems to be working properly, but the final product always has an unpleasant carbonation that makes it hard to drink. I've tried adjusting the temperature, the amount of sugar, and even the type of tea used, but nothing seems to make a difference. Has anyone else experienced this issue, and if so, how did you resolve it? Additionally, are there any specific tips or tricks for brewing kombucha that I should be aware of to avoid this problem? I'd really appreciate any advice or guidance you can offer.

I totally understand your frustration with fizzy kombucha! I've brewed my own kombucha at home for years and had similar issues at first. I found that the problem was usually due to over-carbonation, which can be caused by a few factors.
The most common reason is that the SCOBY is too active and is producing too much carbon dioxide. This can be due to the temperature being too high or the sugar content being too high. Try reducing the temperature to around 68-72°F (20-22°C) and using a lower sugar content, like 1-2 tablespoons per gallon of water. Also, make sure you're not over-feeding your SCOBY with too much sweet tea.
Another reason for over-carbonation is that the kombucha is being bottled too early. It's best to let it ferment for at least 7-10 days before bottling, and then let it bottle-condition for a few more days before serving. This will allow the carbonation to mellow out and the flavors to mature.
Lastly, make sure you're using a clean and sanitized environment for brewing and bottling your kombucha. Any contaminants can cause off-flavors and over-carbonation. I hope these tips help you to finally enjoy your homemade kombucha without the fizziness!
